Chocolate Walnut Muffins

Ingredients:

  • 1 cup oat flour (simply grind 5 minute
  • 2 stage-two containers baby prune
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup non fat vanilla yogurt
  • 4 large egg whites
  • 1/2 cup granular sugar substitute such
  • 2/3 cup unsweetened cocoa powder
  • 2 tablespoon finely chopped walnuts
  • Cooking spray

Preparation:

I’m sure there’s a “proper way” to combine all ingredients (first dry, then wet, then sift it all together) – but I just add them at random, mix it all up, spray a cupcake pan with cooking spray and bake at 350 until they appear to be done. They taste pretty good that way, especially dipped in almond butter.
