Crab & Avocado Salad

Ingredients:

  • 3 tablespoons plain Greek yogurt
  • 2 tablespoons lime juice
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1 pound lump crab meat, cooked
  • 2 celery stalks, thinly sliced (optional… we realize celery is far from universally adored)
  • 1 medium Haas avocado, peeled, pitted and cubed
  • 2 bunches watercress, washed with stems removed

Preparation:

Super simple salad and can save the day if you're getting bored of your usual lunch-time staple! Simply mix the Greek yogurt, lime juice, cumin, and paprika in a medium bowl. Add the crab meat and celery, mix well and stir in the avocado cubes. Place the watercress onto plates and top with the crab mixture.
