Roasted Stuffed Peppers

Ingredients:

  • 4 large red peppers
  • 2 yellow peppers
  • 2 cloves garlic, finely chopped
  • Ground black pepper
  • 2 Tbsp olive oil
  • ½ cup reduced fat feta cheese, cubed
  • ¼ cup pine nuts

Preparation:

Halve the red peppers, leaving the stalks in place, remove the seeds. Deseed & chop the yellow peppers. Place the red peppers onto a baking tray and fill with the chopped yellow peppers, sprinkle over the garlic and season with black pepper. Drizzle over the olive oil. Bake the stuffed peppers for 25 mins until softened, add the cubed cheese & pine nuts, then make for further 15 mins until cheese has begun to melt.
